[NDR-383] Test automation review

Overview

Jira ticket: NDR-383

Description

• Updated the E2E test readme for snomed clarification (see comment)
• Updated checklist template to ensure smoke tests are run for every sandbox, not just UI related changes (see thread)
• Updated merge to main E2E tests to include MNS tests

Context

As part of reviewing our test automation, there were some quick wins we could make.
