All good, though I would wonder if pylatex should be an optional "requirement". Probably would need work splitting build options, but this is probably something to worry about after the build system overhaul.

Fixes #73.
ubuntu-20.04with the latest LTS version supported by the library. The use of the "latest" OS is in line with other scripts in ReMKiT1D-Python including the GitHub CI.pylatextodocs/requirements.txtas this dependency is needed by ReadTheDocs.
