EDU-17349: document PII masking and unmasked retrieval

Documents the new PII masking behavior in the Master Data API v2 schema and retrieval endpoints.

Changes

• Adds the unmasked query parameter to get, search, and scroll document operations
• Documents how v-pii flags schema fields as PII and how masked values behave by default
• Adds request and schema examples showing how to declare v-pii
